Chicken A La King

  1. About 3-4 hours before dinner, place all the ingredients, except for the cornstarch, milk, and chives, into a slow cooker. Cover and set to high. 

  2. Check the chicken around 2-3 hours after cooking. Once chicken is cooked through continue to step 3.

  3. Whisk the milk and cornstarch together, and slowly stir into the slow cooker. Cover and let cook another 30 minutes, or until dish is thick and creamy. (Note: only add cornstarch mixture 30 minutes before you are ready to eat it). 

  4. Top with fresh parsley or chives, and serve over starch of choice (rice, toasted bread slices, homemade biscuits, noodles, etc). Enjoy!

  5. Freezer Meal Instructions:

    Place all ingredients except for the cornstarch, milk, and chives into a gallon-sized freezer bag. Remove all air, seal, label and freeze flat. Remove from freezer the day before you’re ready to cook and allow to defrost in refrigerator for 24 hours. Then follow steps 1-4.

  1. 1 1/2 lb. chicken breast, cut into 1 inch chunks
  2. 2 cups chicken stock
  3. 1 1/2 cups fresh mushrooms, sliced
  4. 3 TBSP. diced pimentos
  5. 1/2 cup onion, pureed
  6. 1 tsp. garlic, minced
  7. 1 large bell pepper, diced
  8. 1/4 cup cooking sherry (optional)
  9. 2 celery stalks, diced
  10. 1 TBSP. parsley
  11. 1/2 tsp. ground nutmeg
  12. 1/2 tsp. salt
  13. 1/4 tsp. ground black pepper
  14. Pinch of cayenne pepper
  15. 1/4 cup cornstarch
  16. 1 cup cold milk
  17. 2 TBSP. minced chives (optional)
